Have you some oppinion about the best connection between SQL Server or Analysis Server?
I'm changing all the structure of my Power BI, and the momment to do the right thing is now.
Any idea will be very appreciated.

It depends on your usage, and data.
For better structure of your data, I suggest you use Analysis Services databse. Power BI actually host a temporary Tabular model database at backend for each opened .pbix file. So all the underlying objects of a Power BI data model is just same as Tabular model. You can just do evertthing within a Tabular project and connect live to the Tabular model in Power BI Desktop.
But if you need to do data transform, or have a lot of work in Query Editor. You may still SQL Server. Because you can't do anything modeling except creating measures when opening live connection to SSAS database.
