DAX - > Below highlighted blue colour is expecting formula is (total UID Prod_Val - row wise Cat value).
Prod_Val & Prod_Stock both are measure column.

You can create a measure as below:
Measure = [Prod_Stock]-CALCULATE([Prod_Val],ALLEXCEPT('Table','Table'[UID]))
If the above one is not applicable for your scenario, please share some source data (exclude sensitive data) and the formula of measure [Prod_Val] and [Prod_Stock] in order to provide you a suitable solution. Thank you.
