PowerBI has now grown with a lot of functions, but debugging and performance optimization tools are the same.
I am now refreshing my report in Desktop, and one of my tables is taking a long time, infos provided are very far from being exhaustive, is there a way to monitor what is going on? Maybe prompting which steps of PowerQuery/Dax are being executed with duration and cpu/ram consumptions.

Please consider using performance analyzer.
You can select Refresh visuals in the Performance Analyzer pane to refresh all visuals on the current page of the report, and thereby have Performance Analyzer gather information about all such visuals.
