Is there any reason why Query Editor is so slow when making simple applied steps to large tables? Like abnormally slow...

Could you please try to uncheck following option? You can also take a look at this article.
File – Options – Data Load – Allow data preview to download in the background.
And we recommend to use the latest version because some performance improvement may be included in Power BI monthly update.
