I have a matrix in Power BI and it has rows that should be combined into one entry. How can I combine the Application/Processing row with the Application/ Processing row? Is there a way to do this without having to go back and correcting the source data and then refreshing?

In Power Query you can click on one of the values and replace them with the other. Which one to retain is up to you.
You can do the same for any other values. However, if you expect for new values to have a similar case in the future, you can try replace "/ " with "/" assuming that there won't be another "/" somewhere else in the text.

Thank you for your response. This does not seem to work for me as all of the options are grayed out and I am unable to select anything when I am in the Transform section.

Usually two options,
1. In Power Query, Right-click column, Replace Values 'Application/ Processing' with Application/Processing

Then use new Column in your matrix instead.

This is what I have. I'm going to reach out to my help desk here to see if they can assist. I'm taking over ownership of this from someone else so I don't know how they did certain things.
You'll need to first provide your crednetial for this data source. Once that is done, all the options will be available and you'll be successfully able to follow the instructions shared by @MasonMA
