You will need to use Git Integration https://learn.microsoft.com/en-us/power-bi/developer/projects/projects-git
I can it being useful in a company that has many developers, but I haven't found a good case for using it myself up to now

Git is source control, not version control. I've used git on my reports for the last 3 years.
It is simple but can still have a barrier to entry. Plus pibp is still in preview, so may not be suitable for the risk appetite at some companies.
In a past life I used SharePoint where were you can save version, and then time travel back to old versions.
