I've created the next matrix:
That matrix is composed between 2 tables: Issues and tasks. All tasks must have a parent issue, however not all issues have a task attached to it. My question is, right now the matrix it is only showing the issues that have a task related (the ones in which you can click on the + to see the tasks related), is there a way for the matrix to show all the issues, even the ones that does not have a task assigned?

Assuming that the Doing | Done | To Do columns are calculated values driven by tasks you should be able to right click on the Issue field and select "Show items with no data".
