I'm hoping to be able to rearrange how the data is displayed in the below matrix. I'm hoping to have the Year and Trim Loss % be seperate from Trim Tons. So it would show all data for the years selected for Trim Loss % together and then start showing the Year and Trim Ton data together. If that makes sense.

Unfortunately, we don't have the option to group the measures with generic options.
But you can achieve this with calculated groups, please refer linked tutorial:
