Given below (visual1) is my waterfall chart in excel. I choose the data point H and select "Set as Total" to get visual 2

In current version, there's no settings to set a data point as total in waterfall chart.
If you want to change the "Total" label, maybe you need to use custom visual-Ultimate Waterfall visual, but it's not free.

@kayalswami , I doubt the first one with standard visual, check some custom visual
