I have a data column that has a bunch of different product names. Some of these can be grouped together with similar other ones.
I know i can create groupings within Power BI desktop, but is it possible to allow users / viewers on the web interface be able to create these groups or edit them??

Hi @jvirgi ,
Current, the grouping feature only available on power bi desktop. If you want to use it at service side, you should deal with these data at desktop and published the report to power bi service. Most of modify operations only available on desktop.

I have the same question. I have a dimension table of product categories, some users want to edit the regrouping in Power BI online by themselves. Is that possible?
One option I can think of is to create a product list on sharepoint and give users the right to edit the new group column themselves and Power BI pull dim_product data from that list.
@Jeanxyz did you ever find a good solution to this? I was thinking maybe using a power app to enable write back of some sort. Not ideal, but may work.

Groupings, do you mean you have created some kind of mapping, level1 --> Level2 etc?
Not so clear, please see this blog, if you are looking to give end user the control to change/drag/drop fields to table/charts and change types:
