Hi, if i create a custom column with a formula, how do i view and update the formula after it has been created (in the query editor)?

Just click the option "Display the Formular Bar" in "Options and Settings".
Then you will see the Formular Bar in the Query Editor.
This shows the formula for the most recently applied step to the query. It doesn't show the formula that was used in a currently selected calculated column. It seems that if i wanted to figure out what formulas someone has applied to a column the only way i can do it is to go back through the history of applied steps as you implied above, and view the formulas or statements that were used to create those columns, until i find the right one. Also, while that might tell me what was used when the column was created how can i change it? Do i have to delete and re-add a column to achieve that?

No, you not need to re-add it, you can open the advanced editor to see the full form of it, then you can modify it on formula bar or advanced editor.
