Current there is no option to disable the 'Show as a table' and 'Include/Exclude' options. You can submit a idea about the unsupported feature.

Did someone submit the idea? I didn't found it.
I'm struggling with the same issue (hiding the "Show as a table" option) with a normal matrix that I don't want that people copy past the data.
In order to don't allowed to copy past the data, I put a blank shape over the matrix. But I must allowd the acces to the head of lines in order to drill the different levels. The problem is that allowing to drill it forcelly means allowing to rigth clic and "Show as a Table" and then copy past the data.
It should be a way to remove the "Show as a Table" option in order to better protect your data.
Can we hide them using below link ..?

not quite sure what you are using and how you are using it, please explain what you are t rying to do , need more information than you have provided.
