Curious to know the difference and when to use which:
- In a table viz, Right click a value in country e.g. Canada and "Exclude"
- Go to Visual Filters section and select All except Canada from Country
(Not urgent)

Exclude/Include is a filter option with basic operations. It doesn't support measures. The visual level filter holds many options including for measures such as less than, greater than.
