Text.FromBinary(
Text.ToBinary([Column1],1252),1256
)

Thanks, seeing your answer I was inspired to solve my problem. I wrote a command like this:
= Json.Document(Text.ToBinary(Text.Replace(Text.FromBinary(File.Contents("C:\20230921_113447\Profit.txt")),"client-value-update:","")))
