So I'm looking to display a matrix that shows each job a certain crew member has on a certain day, however with a matrix I can only show the first or last values. Is there any way for me to accomplish this in Power BI?

Then according to your description, to achieve your gole I think you can try Pivot. To make Date values as column names and use Table Visual to display the data. Go to Edit Queries -> Transform -> Pivot Column.
