This has happened to me twice now. I will update a file, add new tabs and data sources, saving multiple times throughout. I'll go in the next day and nothing I did was saved. Luckily this time I published the changes, so I can hopefully redownload from there. But what do I need to do to make sure that the Desktop version is saving my file properly?
The files live on One Drive.

I have understood your needs and you can try the following to solve your problem temporarily.
1. Make sure you have a stable Internet connection when working with files on OneDrive. If your connection is unstable, it may cause problems syncing and saving changes.
2. Check to see if there are any updates available for your version of the desktop and install them, if available. Sometimes updating to the latest version can solve the problem.
3. Try using the "Save As" option and saving the file to another location to see if the problem persists.
4. Try changing the filename when saving, if the filename for the corresponding platform is also changed, then your file may be saved successfully.
If this does not work, and according to your description, this is your workflow (use PowerBI Desktop to connect to a file on OneDrive and make changes, save it locally after the changes are made, only to find out the next day that it didn't save successfully), is this the right workflow? If not, please point out the wrong part.
