I would like to delete all data from the Power BI desktop; but visuals must stay the same.
I was doing the same process in Excel, pivot tables would not be affecting.
My data is sensitive, nobody should see the whole detailed data.

I agree with @wonga that we are not able to delete data and keep the visualization at the same time. In your scenario, if you don't want other users see detail data, you can publish the report to web then share the dashboard with users instead of share .pbix file. Please refer to this article: How should I share Power BI dashboards and reports?.

You can probably hide the datasets, but deleting them wouldn't work since your visuals depend on the dataset(s) you used to make the visualizations in the first place.
Hiding datasets can only be done from Power BI desktop, just click the root of the dataset and click "hide".
It may be possible to restrict the view to only the report and/or dashboard and not show the underlying dataset, not sure how to do that though...
