Hi guys!
So i got really fed up with clicking on every single value to set it to "SUM" when creating my table. I found out there should be a "default summarization" option in the MODELING card. Yet there is none (and also some of other features are missing). Why is this?

you can go to the Model view, Ctrl+ click on all demanded fields and change its default summarization

It's not missing, it's just moved to a new area.
I see that you are using the new ribbon in Power BI.
Click on your column in FIELDS pane, you will see something like this in the ribbon:
From here you can modify default summarisation.

Oh okay! So I do have to define the default summarization for each value and then it will work on?... Well that doesnt really solve my situation. As i have lets say 40 values, that I will use only once. I would love to mark them all (e.g. shift+click) and then change the summarization.

default summarization option is available on Field level. Pick your field in the right pane and go to Column tools or Measure tools ribbon
