Hello!
Does anybody know why my data labels on my visual don't match the formatting of the actual field formatting? I can't seem to find an answer. The data label is a measure and, as the visual shows, the formatting should be in dollars.
I've tried to format as % and currency using the standard options native to PowerBI and don't have any luck either.
It remained the same...I'm not sure why, but it started working again as expected between versions.
Check the data label format options for that visual and make sure it is set to None (not overriding your default format).

Thanks, @mahoneypat. I don't have any formatting on the data labeling (see picture below). The issue seemingly came out of no where. I have the same visual in an earlier version of this file that is formatted correctly. Even when I copy the version that is formatted correctly from the other file, the formatting of the measure moves from correct to incorrect formatting.
That's weird behavior. Your pic shows display units is set to Auto instead of None. What happens when you change it to None?
