Hi,
I'm trying to do conditional formatting on graphs (clustered bar graph, or even stacked bar graph), but I don't have the data colours and therefore colour saturation options visible on any format menu's in Power Bi.
Is there somewhere that you need to turn this on as an option?

If there is content or values in the legend field in the axis of Visual, you can only change the color manually
If you drag field to Y-Axis and X-Axis to chart as below, you will have fx option.

For the color settings on the bar charts you can have a look at the Bars settings.
You can click on the fx button or show all in your category to assign colors to each category.
Hope that is what you are looking for.

This isn't an option for me. I have columns (which I assume is the same as bars), but there is no fx button.
Yes, so the column charts have column settings and bar charts have bar settings respectively.
