Daily count of product and average daily count over a month

I'm trying to figure out a way to get a daily count of items in storage on any given date in the past.  I am capturing date of intake and date of release.  If the item is still in storage, then there is no release date.  Is there a way to find out how many items I have in storage on any given date in the past and then possibly get an average number of items stored on a daily basis over a month's time frame.  See below for how data is captured:  Each item is given a number under booking ID.  For example, if I want to look at how many items I have on 07/01/2022, I would not want to count any intakes after that date nor any items that were released before that date.
