I'm trying to do a custom format in the following properties section but I wanted to affect only one visual, is it possible?

No, if you set it here, it will change the format of the columns in the dataset.
You can use the FORMAT() function to get the format you want and add it to a specific visual.

if y ou want only to show the format in one visual,
you can use the field formatting of your selected visual.
