Just wondering what the current version of Python will work with Power BI Desktop? Also, should I install using Anaconda or just Python. Thanks.

Yes the latest ver of Python will work.
You can use Anaconda (it's more complicated to set up and launch) but Microsoft recommend using the official distribution from Python.org
