Is there a way to assign dataColors within the json file to pre-dertermined data labels?
Example:
You have 3 products that are red, green and blue.
In addition to defining the general list of dataColors, you should be able to assign (by data label) the red product to a red hue, green product to green and blue product to blue.
If this option doesn't exist yet, is it in the pipeline? That would save a ton of time.

Based on my test, we can only define the general list of dataColors. The Data colors section of the Format panel reflect colors with the same order that you defined in Report Theme.
To assign data colors for specific categories in json file, I'm afraid this is not supported now. You could submit this feature request at ideas page.

Then edit to see if you can set the colours.
If not and changing the colours is not enought add it to the ideas list.
