Ok, so your source is excel.
I suggest that in the power query editor you add a conditional column, replace "> 50 Days" with "50" to get the sorting you need. Close and apply the power query changes. Then in the Data pane select the "Age
Band" column set the "Sort by Column" property to the newly added column.

In the table where you have your "age band" column, add another column "age band sort" then set that column as sort column for "age band".
How to add another column and what data need to be specified
You haven't shared any usefull information on your semantic model and the source of your data, so it is impossible to say what the best method is to add that column. It could be in power query, but also in a SQL view or query.
The sort column however, the actual values are not really important (you should even hide the column) , but it must have the same cardinality but the values should... sort.
for example:
| age | age sort |
| 0-10 Days | 00 |
| 11-20 Days | 11 |
| 31-40 Days | 31 |
| >50 Days | 50 |
That doesn't help. What is the data source? What does your power query look like? Edit query -> Advanced Editor.
