how can I get the EventStream's source from the Delta table in the Lakehouse? or from the API? it seems limited to only those 2?
And when I want to connect to the Data Source, it says:
and when I click Continue, it mentions that I don't have permission to access this resource.
Here the source of the onelake is OneLake events. You can see the source here in my Microsoft Fabric

The message seems to a login issue, if you logout and then logout, mostly it will solve the issue. Its not a access issue. If I am getting you correct, you are trying to stream delta tables(lakehouse tables) which is not supported yet, if u have data in azure data explorer you can then stream it using eventstream.
Once you click on "New source" -> "Connect data sources", a list of sources can be seen.
One point to note here is, eventstreaam will consume lot of CUs which can be bottleneck in future. As suggested by @v-sdhruv , shortcut can be good option to explore.
