Matrix Visual Aggregation and Customize Grand Total

In the below  table (excel Pivot table) the values are displayed using the calculated field based on No. of days before the Order Placed for each category (Column) for each Customer.

And in the Grand Total I don’t need the sum of days, I need the Count of Categories ordered for each Customer, and also need to count the No of Categories Ordered in last 10 Days
