Displaying filtered values in a visualization for change over time

For a COVID-19 related project, I am working with school enrollment data with the categories of Face-to-Face, Hybrid, and Distance Learning with rolling data that is updated daily. I want a highlight visualization, or three if it is better that way, to display only the schools with X percent change (probably 10 percent) over the last X days (probably either 7 or 10).  Thank you for any suggestions and assistance.

Suggestion would be to try it out yourself and come back here when you get stuck. Or, provide sample data in usable format and show the expected outcome.
