Use old layout on upgraded version

Hi, I have several APPs made via sharepoint but I now understand that I should move them to "the upgraded version". But I cannot find out if I can use the old layout in the "upgraded" version. I really like when pages is displayed as in excel in the bottom of the pages.

You can turn on or off the New look at the top right corner.

Does this work in the upgraded version as well?

Of course, it is used for upgrade workspace, so you can switch back to old version.
