Live Connection Excel Export - Pivot Table Opition?

Hello!  We have some users who are really liking the new(er) Live Connection Excel Export option, which allows them to see more than 500,000 rows for their exported visual - great addition - thank you!
My question is around how this live connection is presenting itself in Excel - as a regular table rather than as a Pivot Table.  Is there a way to get the exported table to present itself as a pivot table with all of the fields in the data model available to add or remove to the exported table?

The goal would be to keep the existing columns that are on the table in Power BI but then be able to add the additional fields available in the cube.

It appears that this live-connection export only keeps the fields on the visual for further analysis (once in excel you can either covert the existing table to a reduced-view pivot table or create a new table from the existing connection which only contains the fields present on the visual)

Would the workaround be to have the user customize the visual prior to exporting and does this work?  Maybe build the table from the dataset (would this still connect as a live connection?)
Your guidance for the most streamlined process is much appreciated here!
