I’m looking for a way to save the dataset from the Fabric Metrics App to a data lake or some storage, but I’m having trouble doing so. Any suggestions on how to accomplish this?

You can use PowerShell and Power BI rest APIs to extract and save logs in JSON or csv formats then you build your report with Power BI

I am using the Power BI REST API for Execute Queries and managed to retrieve some tables. However, there are others that it returns as empty, even though they actually contain data. Can you help me with this?
Another point as well, is there a way to list all the tables in the dataset?

Yes, you can use this in the Query:
EVALUATE INFO.TABLES()
This will return all tables in a model.
