When I go to the Admin Portal, on Power BI Premium, I can see all the workspaces assigned to each capacity node. However, I can't export the list of workspaces or their respective adminstrators, to Excel. I've tried to get that list from the logs, but as you can guess, it is not the latest information. Has anyone done this before? Is this a functionality being planned for the near future?

I'm afraid it is impossible to get a list of workplaces directly in the Admin Protal.
You may try some APIs to see if it helps.
Admin - Groups GetGroupsAsAdmin-> Returns a list of workspaces for the organization
Groups - Get Group Users ->Returns a list of users that have access to the specified workspace.
