We are using power bi report server, together with another tool "matomo", for analysing logs generated by power bi report server.
Is there a way to change the format of the logs to a specific format (e.g. like for apache logs), so as for better analysis with matomo?

According to your description, you want to change the format of the log files of the Power BI Reporting Server so that it can better analyze the log information in other tools.
Unfortunately, as suggested by lbendlin, there does not seem to be a way to change the format of the log file itself in power BI. Since the log format is generated by default, there is no direct human intervention. You can try to follow lbendlin's suggestion and post your request on the Ideas website, so that more people can see your idea and vote for you.
If you want to artificially modify the format of the log files in the report server, you can try to make a backup of the log files you need to analyze first, and then use other tools to modify its format (e.g., by using python tools) into a suitable format for data analysis. This requires that you have the ability to use the appropriate tools, or have a member of your team who is proficient in python to handle the appropriate files.
