Unpivot columns
In the end I achieved it with part of your proposed solution.
First I clicked on the transpose option. I did the first row of headers and then pivot table.

It would usually be easier to perform an unpivot operation on data like that so that you had 3 columns: Name, Date, Place
Then it becomes simple to filter by the name and date columns.
