I am trying to setup Exchange Server as a data source in order to schedule refresh in Power BI. Is there a way to set up Exchange Server as a data source? I don't see Exchange Server as an option in the list of Data source types.

If you mean you get data from the Microsoft Exchange Online in desktop, then publish the report to service. Data gateway is not required, dataset connect to Exchange online directly. You just need to enter credential for the dataset then schedule the refresh.
