May I know whether your issue is that the data source used by the pbix file doesn’t update after you removing original data source by PowerShell script and switching it to another dataset?
I’ve tested at my side. It works well. These are the tests I’ve made.
Test 1
- Remove Live Connection to LocalHost SSAS in a report by PowerShell script and re-point it to a dataset in Power BI service(app.powerbi.com)
- Save and close the pbix file
- Reopen it, data source has been updated
Test 2
- Remove the updated data source in Test1 by the script again
- Connect to a dataset in another workspace
- Save and close the pbix file
- Reopen it, data source has been the dataset in another workspace
