Hi!
I have a customer who wants to retrieve their data from Fabric. There are a couple of solutions for extracting data to an Azure SQL database or Azure ADLS. However, the customer is not currently using Azure and likely wants to store the data on-premises again.
Two solutions I think they would prefer are either to get the data back to their on-premises database or to build their own web UI to display their data.

There is a direct connector in data pipelines in fabric to access lakehouse, so that should work to copy the data

As suggested by @NandanHegde , using Copy Data Activity in Fabric can be used to Export data from Fabric to on-premises effectively and securely using On-Premises Data Gateway.
Here are the Pros and Cons of Copy Data Activity:

Thanks for mentioning the data gateway, I thought I had to use that one. I think the source of my data will be the Lakehouse in Fabric, I have not decided yet.

You can use Data pipeline copy activity to copy data from fabric environment (lakehouse, fabric warehouse/database etc) into On Prem but you would need an on Prem data gateway to accomplish that.
When you say extract data from Fabric, can you plz specify what is the source of your data?
