I'm working on developing an applicant tracking system for my company's recruiting department. I have created a few power apps that feed data input by users into the MS List below. My goal is to track the applicant's input into this list and which recruiter created the data or modified an item within the list. I found one video online (video link) that gets pretty close to what I'm trying to do, but I have not made it work. My original plan was to leverage the modified by, created by, modified, and created columns in the list to track changes made and use that data to record data like the average time between steps or recruiter activity.
My question: Is there another way to leverage the version history data within Power BI? or should I create a column next to each process step date column that works like an "accomplished by" column?

AFAIK, current power bi does not exist historical data feature. You may need to export these data to temporary database with and timestamp to remark the operate datetime.
After these steps, you can use power bi getting data from this database to get whole records and history.
