summarization table does not has 'Show value as' Option.

I am trying to use show values as percentage function through summarization table, but that option seems to be missing in the table. I am using latest version of power bi [May 2023]. Attaching below screenshot of the summarization table.

Hi @ImPranav 
You need in the first step select the type of aggregation and than how to show it:

Hi again @ImPranav 
I saw that with "graph on object" feature works in a little different way.
After step 1 of choosing aggregation, you need right click on a value to open the window of choosing how to show it.

If you want to locate the data pane on the right side, you need to check off the option of "on object interaction":
From File << Options and settings <<Options << Preview features

After modifying you need to close and reopen the power bi desktop.

What I mean to say is in the first picture shown, we can clearly see the order date hierarchy when its dragged into the data column.

But in my example which is the second image, I am not able to get the same hierarchy rather I am getting the whole 'Order date' data. 

Because of which I am unable to represent my data solely based on years/months/dates rather it is showing some numbers such as [42372,42373,42374,42375 etc.] as we can clearly observe in the images provided by me.

I think you're at the point where you should create a date table and work with it.

Is there a way of doing this for measures? I was previously able to but with the new update it looks like I can't.

Some of my visuals are now showing the value instead of the % of total as it previously was.

Yes, it works for the measures too...but a little less intuitive:
instead of a left click, you should give a right click on the measure:
