I want to have a card or something that will state that the data in the visuals below is reflective of the end of the previous week, or current week if it is the end of the week. I'd like to do the same for the EOM. I just can't figure a way to do that that makes sense. Not even sure if it's possible. I've scoured these boards and haven't found anything like it other than when the data was last refreshed. I don't need that as anyone can see it on the service. Is that possibly how I need to go about this though?

I'm assuming you're after a dynamic way to present the "reporting date" (i.e. data current up to x date) rather than when the model was refreshed? If so, is there a field in your data that would represent this. For example, the max date of your Fact table date column?
In such an event, you could use MAX ( 'Table'[Date] ) to obtain the most recent record date and use that as the basis. Alternatively, you can create an independent CSV / XLSX with a Date in A1 and use that as the reporting date then link it in to you model.
Once you get the above, you can then use IF statement logic to return "Current Week" or "Last Week" etc based on the date above.
