@Anonymous These are all variations on a theme involving COUNTROWS, DISTINCT and SELECTCOLUMNS with maybe a FILTER and EOMONTH thrown in for your last 3 months:
Unique countries = COUNTROWS(DISTINCT('Table5'[Country]))
Unique sites = COUNTROWS(DISTINCT(SELECTCOLUMNS('Table5',"Country",[Country],"Site",[site])))
