I'm trying to create a drill down for charts with dates on my x-axis so that users can drill down from year to quarter to month to week to date.
My understanding is that a date hierarchy should automically be created for any date column as long as auto time intelligence is enabled in the settings.
Can anyone help me understand why I the hierarchy isn't present?

Did you check the Data Load section in Options for both Global and Current File? There is Auto date/time option in both. It is possible it is on in Global, but off in Current File. Also, I suggest adding in a date table and marking it as a date table, then utilizing that instead. http://powerbiwithme.com/2023/08/01/the-custom-date-table-edition/
