How can I remove a part of the data in the visual header? See below, I'd like to just remove the 4.35% piece.

That is the tooltip. You can turn the tooltip off, but what that is doing is reporting what is in your measure, and it generally shows you what is in the chart, plus any additional fields you put in the ToolTip box for the visual Field list.
The only way to surgically remove one specific measure that you are including in your chart would be to create a custom tooltip report page.
