I am trying to get a trend of a value across multiple sheets (Sales number per work week, individual numbers), as a SUM per week trend visual. At the minute in the visual it is only giving one data point since it is suming all weeks together.

What is your data like? What is your values? How about use a measure?
measure=max(table1[value1])+max(table2[value2])+max(table3[value3])
If it still does not help , could you please provide your pbix file without privacy information and desired output with more detials.
