I am trying to edit the default tooltip that looks like the below screenshot. I would like to remove the second and third lines and then add in other data. How can I edit this?

As far as I know, it's not possible to change default tooltip behavior. You can add columns to the default tooltip but not change the order for example.
My advise to you is create your own tooltip.
