Hi,
I am currently trying to sort my table by 'TaskOutlineNumber' but as you can see in the image below, it is not sorting properly.

I have used the 'Sort by Column' option located on the Modelling tab but it still does not sort in approriate order.

Based on my test, I dragged fields to table visual, the default view shows correct order for [TaskOutlineNumber] column without applying any "sort by" setting.
In your scenario, please try below steps to resolve the problem.
In Query Editor mode, duplicate the [TaskOutlineNumber], then, split it by number of characters. Remove unnecessary columns.
In data view, under modeling tab, changde the "sort by column" from default to "TaskOutlineNumber-Cppy.2"
