The problem I'm experiencing with showing dates and text on the X-axis is that it will not read correctly in Power BI.
Power BI turns this:
into this:
Is there a way to fix this?
you need to select Format Group where you will find the format option

To what I can see you have an Average montlhy value on the middle of your dates have you tried to change the chart in to a Bar / Line chart where you place the dates has axis and the average value on the lines?
Seems much more intuitive than to mix all the data in the Axis.

Changed my chart to line and bar chart, but the dates still aren't reading in the correct order. the dates are formatted as text so that Power BI won't try to cover the gaps of the days I filtered out of my data set. I also seen this trick to add a MonthNum to the data set and sort from that, but that isn't working as well. Any advice?

You need to format the dates has dates, and then change the axis to categorical and select the option show values wihtout data, that allows for the dates to be continuous and show the gaps.

If you don't want the gaps you should have you dates has dates, choose the categorical view and that will hide the gaps.
