I am trying to keep track of the products we sell but finding it difficult to monitor since my sales data drive what I see in my table. For example, if we sell 20 products, but the specific retailer only purchased 12 of them, I only see 12 products in my table. Is there a way to "set the assortment" (or dependent variable) and see the status regardless of sales or inventory data? I am looking to see the status of all 20 products - whether or not there is sales or inventory data feeding in. Thanks in advance for any help!

According to you description, sales table was filtered to only show the 12 products of the specific retailer. If retailer, products and sales are in the same table, you could create a calculated table with all retailer and use SELECTEDVALUE() function to choose specific retailer and IF() function to determine whether the retailer has purchased products.
