I run the same reports each week and want to replace last week's data with this week's data. Is there a way to keep the visualizations (filters, setup, titles, etc.), replace the data from Excel and then refresh the results?

Out of my understanding you want to replace/ refresh the data every week.
Make a table with your current data ex: Date, Value1, Value2 and so on.
So now you want to replace it with Currenct week's data.
Select the table visual , go to visual level filter and select the Date column. Drop down and select Relative Filtering and select last 1 calendar weeks.
This way your data will always be availabe only for Last 1 week. When you refresh your data again next week it gives you only that week data.
