I would like to ask for assistance on this:
when I tried to refresh the data, it will still contain those expanded values that were converted to table. I want to make sure that the new values will be retrieve once refresh.

Did you mean these 'GUID' field names will be changed every time the data source is updated? If that is the case, the current power query will cache the first process result data structure into the query steps.
I think you need to use the M query function to dynamic pick the field name and parameterized it into the query steps.
If you are confused about the coding formula, please share some dummy data to test. (you can extract them from your query table steps, remove sensitive parts and paste them here)
